No fat organic potato chips. Junk food gets healthy

I've become addicted to these easy to make snacks.  They are really easy to make and taste great.  Potatoes themselves are actually very good for you.  And this week Organic Russet Potatoes in a 3lb bag are buy one get one free at City Market.  It is all the things we add to them that make them no so good for you.  All right you're saying get to the point.  Wash an organic russet potato (I'm sure you can use other types of potatoes but I've only used russet) and slice it as thin as you can.  If I'm making a big batch I'll use the Cuisinart with the 2mm slicing blade.  Rinse the slices in cold water to remove some of the starch.  Then lay them out on a towel to dry at least one side and sprinkle with salt.  Place them (not touching) on a piece of parchment paper cut the size of your microwave tray.  Cook them in the microwave until they get brown in the middle.  That can take anywhere from 3-10 minutes depending on how many slices you have and the strength of your microwave.  When they are brown take them out of the microwave and cool (so they crisp) before serving.  Whip up a little onion or ranch dip with nonfat yogurt and voila.  YUM!

Saving vegetable ends for soup stock

Every time I peel a carrot (mostly I buy the big 5 lb bag of whole organic carrots they are so much cheaper than the mini peeled carrots) or an onion or chop off the tops of celery I put the peels and tops in a bag in the freezer.  When the bag fills up I add some parsley, bay leaf, salt and pepper and boil it up into stock.  If I roast a chicken I'll save the bones and throw them in the pot too.  Then I jar it and store it in the fridge until I'm ready to make soup or need a splash of stock for a recipe.  How much do you pay for a box of organic stock?  And this you make with bits that would otherwise end up in the trash.  You can't get much cheaper than that.

City Market has Cascadian Farm Organic cereals on sale (2 for $6.00) until 4/6 and Coupons.com has a dollar off coupon.  That makes them $2.00 a box.  You can't get non-organic generic for that price.  Print as many coupons as will allow and go stock up.

Saving on Organics at the Grocery Store

I like City Market produce. I think they have a good selection of Organics on sale this week and lots of other good fruit. Organic spinach or baby greens, 16oz. clam shell for $3.99 and organic peeled carrots $1.00 a pound and organic lemons 2lb bag for $2.99. Cantaloupe 2lbs for a $1.00 and the little yellow mangoes 2 for $1.00. Lets not forget the 5 pound box of clementines for $5.99. All natural ground beef $3.99 pound. Cascadian Farms organic cereals 2 for $5.00. Organic milk $2.50 for half gallon. It is still a better deal to buy a gallon of milk but only if you'll use a full gallon. Tropicana orange juice is $2.99 a carton. There is a coupon for a $1.00 off an Organic Valley product in the Optimum Wellness magazine available at City Market in the produce section. The best tomatoes you'll ever eat.

One of the best ways to save money on organic vegetables is to grow them your self. Last year was my first attempt at growing anything. I discovered
Seeds Trust (www.seedstrust.com) a seed company that specializes in seeds for our high altitude and short growing season. They sell a collection of Soviet Union tomatoes which is 5 packets of different tomato seeds for $8.95. I used pots on the deck for my garden. I actually went to Home Depot and just bought a bunch of their 5 gallon buckets($2.95 ea.), drilled a few holes in the bottom and filled them with dirt. I kind of got a late start last year but was still able to harvest some wonderful tomatoes. Every bite was an explosion of sweet flavor! I chose Mountain Romas, Galina(a yellow cherry tomato) and Kotlas (red sweet 2oz tomato.) I also planted some basil and cilantro along with bell peppers. The herbs are still going strong but the peppers didn't have long enough to mature before the frost hit. For a small up-front investment you can have a bountiful harvest of organic amazing vegetables. Now is the time to get those seeds started so you can harvest before our short summer is over.
