No fat organic potato chips. Junk food gets healthy

I've become addicted to these easy to make snacks.  They are really easy to make and taste great.  Potatoes themselves are actually very good for you.  And this week Organic Russet Potatoes in a 3lb bag are buy one get one free at City Market.  It is all the things we add to them that make them no so good for you.  All right you're saying get to the point.  Wash an organic russet potato (I'm sure you can use other types of potatoes but I've only used russet) and slice it as thin as you can.  If I'm making a big batch I'll use the Cuisinart with the 2mm slicing blade.  Rinse the slices in cold water to remove some of the starch.  Then lay them out on a towel to dry at least one side and sprinkle with salt.  Place them (not touching) on a piece of parchment paper cut the size of your microwave tray.  Cook them in the microwave until they get brown in the middle.  That can take anywhere from 3-10 minutes depending on how many slices you have and the strength of your microwave.  When they are brown take them out of the microwave and cool (so they crisp) before serving.  Whip up a little onion or ranch dip with nonfat yogurt and voila.  YUM!
